HANUKKAH DAY 4! CHRISTMAS CAKE

 

Cook Time: 60 minutes

Serves: 14 slices

Ingredients:

  • 2 cups almond flour
  • 1/2 cup of dried organic apricots
  • 1/2 cup dried dates
  • 1/2 cup dried figs
  • 1/2 cup raisins
  • 1/2 cup prunes
  • 1 orange (zest & juice)
  • 3 tablespoons coconut oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon nutmeg
  • pinch of salt
  • 1/2 cup of nuts of choice

Instructions:

  1. Preheat oven to 375° F.
  2. Slice all the dried fruit and mix together in a bowl. Grate the orange zest and add to the bowl along with the juice. 
  3. In another bowl, mix the eggs, oil, vanilla, spices, and salt, and whisk mix in the dried fruits, and fold it gently into the mixture. Add the nuts.
  4. Empty the mixture into a greased loaf pan and bake for 60 minutes.
